Golden Honey Rolls
INGREDIENTS:
1 cup milk
1/2 cup oil
2 Tbsp. honey
3-1/4 cups all purpose flour
1 pkg. active dry yeast
1 tsp. salt
2 eggs (reserving one egg white for topping)
1/3 cup sugar
2 Tbsp. butter, softened
1 Tbsp. honey
reserved egg white
PREPARATION:
In a large saucepan, combine milk, oil, and honey until very warm, about 110 degrees Fahrenheit.
In large bowl, place 1-1/2 cups flour, yeast, salt, eggs (reserving one egg white) and warm milk mixture.
Beat three minutes at medium speed. Then add the remaining 1-3/4 cups flour and beat for 2 minutes longer. The dough will be very soft and sticky.
Cover bowl and let the dough rise in a warm place until light and doubled in size, about 1 hour.
Generously grease 2-8" round cake pans with unsalted butter or solid shortening or spray with cooking spray.
Stir down dough, beating for 1 minute. Then drop the dough by tablespoons into a single layer in each prepared pan, making 10 rolls per pan.
In a small bowl, combine sugar, 2 Tbsp. butter, 1 Tbsp. honey, and reserved egg white and mix well. Drizzle half of this mixture over the rolls. Then cover the rolls and let rise again in a warm place until doubled in size. Drizzle remaining topping over rolls. Then bake at 350°F for 25-30 minutes or until golden brown. Immediately remove from pans. Makes 20 rolls

1 (1/4-ounce) package active dry yeast

1 Tbsp. finely grated orange zest
1 1/4 teaspoon. salt
4 to 4 1/4 cups all-purpose flour, plus more for dusting
Filling:
1/2 cup firmly packed light brown sugar
1 Tbsp. ground cinnamon
4 Tbsp. unsalted butter
Topping:
3/4 cup firmly packed light brown sugar
4 Tbsp. unsalted butter
3 Tbsp. honey
1 Tbsp. light corn syrup
1 1/2 cups (6 ounces) coarsely chopped pecans
Method
1 Make the dough. In the bowl of an electric mixer, combine warm water, yeast and 1 tsp. sugar. Stir to dissolve and let sit until foamy, about 5 minutes. Here's a good photo and description of what the yeast should look like after several minutes.
Add milk, butter, remaining sugar, egg yolks, orange zest, salt and 3 cups flour. Mix on low speed until blended. Switch to a dough hook and then, again on low speed, slowly incorporate the remaining 1 cup of flour. Increase speed to medium, kneading dough until smooth and slightly sticky (adding a little more flour if too wet), 3 to 5 minutes. Shape the dough into a ball and place in a large, buttered bowl. Turn dough over in bowl to coat with the butter from the bowl. Cover the bowl with plastic wrap. Let rise in a warm place until doubled in volume, about 1 hour (or 2 hours if not in an entirely warm place). After the dough has risen, punch down. Turn out onto a lightly floured cutting board and let sit 20 minutes.
2 Make the filling. Combine brown sugar and cinnamon in a small bowl. Melt butter; keep separate.
3 Roll dough out into a 12" x 18" rectangle. Brush with melted butter and sprinkle with cinnamon-sugar mixture. Starting with the long side, roll dough into a cylinder. Place seam side down on a flat surface and cut crosswise into 15 slices.
4 Make the topping. In a 1-quart saucepan, combine brown sugar, butter, honey and corn syrup over low heat; stir until sugar and butter are melted. Pour mixture into a greased 9" x 13" pan and sprinkle pecans on top.
5 Place dough slices, flat side down, on top of prepared topping. Crowd them so they touch. Cover with plastic wrap, leaving room for the buns to rise, and refrigerate overnight.
6 Remove the rolls from the refrigerator and let stand at room temperature while the oven pre-heats. Preheat oven to 375°. Bake buns until golden, 30 to 35 minutes. Remove pan from oven and immediately (and carefully as not to spill hot topping on your toes!) invert onto a serving tray or baking dish. Let buns cool slightly and serve warm.

Pecan Honey Rolls Recipe
Dough
2 packages (5/16 oz. each) Hodgson Mill active dry yeast
1/2 cup warm water, 115 degrees F
1 1/2 cups skim milk
1/4 cup honey
1/2 cup pecan butter
1 teaspoon salt
1 cup Hodgson Mill oat bran hot cereal
2 egg whites
2 cups Hodgson Mill Best-for-Bread white flour
2 1/2 cups Hodgson Mill unbleached flour
Vegetable oil to coat bowl and baking pans
Filling
1 tablespoon margarine, melted
1 cup chopped pecans
Glaze
1 cup confectioners sugar
7 teaspoons milk
2 tablespoons pecan butter
Add yeast to warm water and let stand for 10 minutes. In a large measuring cup or saucepan, combine milk and heat to 115 degrees F (1 1/2 minutes in a microwave or 4 minutes in a saucepan). Pour this liquid into a medium-sized mixing bowl. Add pecan butter, salt and oat bran hot cereal and mix well (you may use a mixer). Let sit for 5 minutes to soften the oat bran hot cereal. Blend egg whites and yeast into oat bran hot cereal mixture.
Add Hodgson Mill Best-for-Bread white flour and unbleached flour to make a soft dough. Turn onto a lightly floured surface and knead until smooth, about 10 minutes by hand or 4 minutes in an electric mixer or food processor fitted with a dough hook. Put dough in oiled bowl, turning once to coat thoroughly. Cover with a damp cloth and allow to rise in a warm, draft-free place until doubled, about an hour. Knead down. Turn onto a lightly floured surface. Divide dough in half and let rest for 10 minutes. Roll out half of the dough into a rectangle 12 by 8 inches, brush with melted margarine. Sprinkle 1/2 cup chopped pecans over the dough. Roll dough, starting with the long side. Seal the edge, cut into one inch slices, and place, cut side down, on prepared pans. Repeat this procedure with the other half of the dough. Cover with a damp cloth and allow to rise in a warm, draft-free place until doubled in size, about 45 minutes. Preheat oven to 375 degrees F. Bake about 15 minutes, until golden brown. Remove rolls from pans and cool on racks.
In a medium-sized mixing bowl, combine confectioners sugar, milk and pecan butter; mix well. Drizzle rolls with glaze when cool. You can sprinkle extra ground toasted pecans on top if desired.
To make pecan butter: toast pecans and grind real fine. Add 1 tablespoon sugar and 1 tablespoon cooking oil per 1 1/2 cups ground pecans. Mix well.
