And while she is not terribly swollen up, she is a bit pudgier and has gained weight, she is due any day now and I am certain I can feel about two puppies. She only mated once- is it possible for dogs to have such small litters?

You might have felt two, but they can be more. Yes it is possible for dogs just to have two in a litter. Depends on the female, size, age. How often you breed her.

Puppies move around so much in the mommy belly. It is really hard to tell how many she will has just by your feel.

Good luck on your litter.

Dogs can have 1 or more puppy in a litter. Maybe the dog's sperm wasn't in a very energetic mood that day or her other eggs maynot have taken. Even vets can only guess at the number of puppies by feeling, there may be more tucked up in her belly that you may not have felt. I'm sure you will find out either way in the next couple of weeks. Good luck hope all turns out well.
