environmental engineering promises a very good career opportunity.
regarding difficulty its hard to answer as it depends on a persons ability to grasp

Definitely go with the environmental engineering. Regarding difficulty, it depends on what you would like your specialty to be. Site remediation in itself has so many field specialities.
