It seems that some movies turn out fine...but others either come out with extremely poor quality...or are missing huge chunks in the middle. Is there a more consistent program out there? (Ex: Nero Recode 2?)

I've been using dvdshrink.....it's crazy outdated I know but i just like it. It doesn't handle newer encryptions by itself and it relies on the nero burning engine so it's a good idea to have that installed as well.

dvdfab is my main ripper. it's updated regularly and will handle all the new releases....I get about 20~25 a month off the blockbuster plan and never have a problem. dvdvab decryper is freeware and will rip anything you throw at it. they also have gold and platinum versions (registration hacks are all over p2p networks) that have more options.

I still like using shrink so i usually rip with fab and load the files into shrink but if you pick up platinum edition than you shouldn't need anything else to go with it.
