Why worry? Cauliflower is good. I ate half of one a few days ago. (steamed)

If you want to get all scientific about it, you'd need a few cauliflower heads to get a good average. Take them apart one at a time, and weigh all of the florets of a head together, and then weigh them separately. If you have ten florets in a head, then they each ought to be about 7 -12% of the whole. You can go by weight, or by counting florets and figuring the percentage roughly that way.
