A "head" of cauliflower is much like broccoli. When cleaning the head you will notice smaller stems coming off a larger central stem. At the top of these smaller stems are florets resembling a cluster of small beads. Near the base of the head they will be larger, getting smaller as you get to the top of the head.

A cauliflower is made up of many smaller florets, each looking a bit like a flower. As to the percentage, that depends on how big the cauliflower is. They don't consist of the same number of florets.

no defined standard measurement for a floret.
Figure 50% of the cauliflower mass is not florets and then make up a nice number to reflect what is a floret. It's ambiguous quantity any number greater than 10 would work

You know how when you look at a whole cauliflower from the sides it looks like a tree trunk at the stem and then branches out of that end up in the white florets? Well, each branch ends in one floret. I cannot say what the percentage is, it depends on how big the cauliflower is, and also each has its own individual shape.

I will not be inviting myself around to your house for supper - I hate cauliflower with a passion! My aunt invited me round to hers for supper and I forgot to tell her I do not eat cauliflower and she served me cauliflower boiled to death and then fried in egg. Oh boy, was I ill after that!

Define Cauliflower

Weigh the whole cauliflower, then weight one floret.

Divide the floret weight by the total, and multiply by 100.

It is hard to generalise as all cauliflowers are different in weight and so are the florets.
