If you are 100% that she s flirting then go for it but do keep in mind that you are going to have to explain to her that you keep your work relationship separate. Me I would be very cautious about dating in the office especailly if you're her boss. Whatever you do keep it between the two of you for the time being because in some companies it is against company policy to date someone not on the same level as you are especially when you are her direct boss. Avoid the situation at all costs! You could never persue a relationship with this girl as long as you are her boss. I'm sure you know all the trouble this would cause. I would just try to ignore the flirting and if it gets worse you'll have to talk to her about it.

That depends on the circumstances.
"You're cute; I wish you didn't work for me so I could do something about it" is appropriate in a lot of situations.
