What can't you cook using mint! You can use it in almost anything.

Mint tea, lots of Asian cuisines use fresh mint in their salads and relishes, Greek recipes use mint in profusion, mint jelly is an old English standard with leg of lamb.

Dried mint can be put into stews and soups.

Toss a few clean leaves in while brewing tea, either hot or iced.

Make a simple syrup, adding mint to the hot mixture and letting it steep. This is great in iced tea, lemonade, or mint juleps!

Taboulleh commonly has mint in it as well. Here's a recipe.


Tabbouleh

1 cup bulghur wheat
1 1/2 cups boiling water
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup good olive oil
3 1/2 teaspoons kosher salt
1 cup minced scallions, white and green parts (1 bunch)
1 cup chopped fresh mint leaves (1 bunch)
1 cup chopped flat-leaf parsley (1 bunch)
1 hothouse cucumber, unpeeled, seeded, and medium-diced
2 cups cherry tomatoes, cut in half
1 teaspoon freshly ground black pepper

Place the bulghur in a large bowl, pour in the boiling water, and add the lemon juice, olive oil, and 1 1/2 teaspoons salt. Stir, then allow to stand at room temperature for about 1 hour.
Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and the pepper; mix well. Season, to taste, and serve or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.

Lemonade-Mint Iced Tea

INGREDIENTS
3 tablespoons crushed fresh mint leaves
1 quart boiling water
1/2 cup instant iced tea powder
1 cup white sugar
2 quarts cold water
1 (6 ounce) can frozen lemonade concentrate, thawed
DIRECTIONS
In a 1 gallon pitcher, combine the mint leaves, 1 quart of boiling water, instant tea powder and sugar. Stir to dissolve sugar. Let stand for 15 minutes.
Stir in the cold water and lemonade concentrate. Serve in tall glasses over ice. Strain out mint leaves, if desired.

Thin Mints:

2 hours 35 min prep
42 servings

2 1/4 cups all-purpose flour
1/4 cup cornstarch
6 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
1 cup white sugar
1/2 cup butter
1/3 cup 2% low-fat milk
1/2 teaspoon vanilla extract
3/4 teaspoon peppermint extract

1. In a small bowl, whisk together flour, cornstarch, cocoa powder and salt.
2. In a large bowl, cream together butter and sugar. With the mixer on low speed, add in the milk and the extracts. Mixture will look curdled. Gradually, add in the flour mixture until fully incorporated.
3. Shape dough into two logs, about 1 1/2 inches (or about 4 cm) in diameter, wrap in plastic wrap and freeze for at least 1-2 hours, until dough is very firm.
4. Preheat oven to 375F before slicing your cookies.
5. Slice dough into rounds not more than 1/4 inch thick and place on a parchment lined baking sheet. Cookies will not spread very much.
6. Bake at 375F for 13-15 minutes. Cookies should be crisp when they cool.
7. Drizzle with melted chocolate, if desired.

Fresh Mint Ice Cream Recipe

Ingredients:
1 cup granulated sugar
1 cup water
2 cups fresh mint leaves -- packed
1 cup whipping cream
1/4 cup cider vinegar


Directions:

In a small saucepan, combine sugar and water. Cook over medium heat for 2 - 3 minutes, until sugar dissolves. Bring to a boil over high heat; boil for 2 minutes. Remove saucepan from heat; let cool for 10 minutes.

In a food processor or blender, combine sugar syrup and mint leaves; process until mint is finely chopped. Transfer to a bowl, refrigerate, covered, until chilled. Strain mixture through a sieve, pressing on mint leaves to extract as much liquid as possible; discard mint leaves.

Ice cream maker method: Stir cream and vinegar into syrup (mixture may look curdled). Freeze in an ice cream maker according to manufacturer's instructions.

No ice cream maker method: Whip cream until it holds stiff peaks; fold into syrup along with the vinegar. Spoon into shallow pan; freeze until firm.

there are 2 great things and there simple that you can add mint to . Believe it or not mashed potaotes . It will make them great add garlic and mint to any type of mashed potates .

You can also put mint in chicken noodle soup . It will make it taste soooo yummy .
