Try speaking to a local wedding planner or minister. They will have the best suggestions for locations, time of year and suggestions for weather implications.

I know you said Mid TN, but what about the Smokey Mountain National Park. They have some beautiful sites...
I actually got married at a chapel that does outside services... It is really beautiful and inexpensive. The website is listed below.
