McCormick makes an envelope of the perfect spice for that. White Chicken Chili. It's fabulous! Just add chicken and white beans. I also threw in some chopped tomatoes. It's sooo easy and everybody loved it.

White Chili
Chili with a Twist!
3 16oz. cans Great Northern White Beans
4-5 cups chopped cooked chicken breasts or pheasant breasts
1 Tbls. olive oil
2 onions, chopped
4 garlic cloves, minced
2 4oz. cans chopped green chilis
2 tsp. ground cumin
1 1/2 tsp. oregano leaves
1/4 tsp. cayenne pepper
6 cups chicken broth
3 cups Monteray Jack Cheese
Boil the breasts in water about 20 minutes or until done. drain and cool.
Heat oil in kettle over medium heat. Add onions and cook til translucent (10 minutes). Stir in garlic, chilis, cumin, oregano, cayenne pepper and cook a few more minutes being careful not to brown the garlic.
Add undrained beans, broth, and breast meat. Bring to a boil. Reduce heat and add cheese to the chili. Stir until cheese melts.
Serve with more cheese and sour cream!

INGREDIENTS
1 1/2 pounds skinless, boneless chicken breast halves - cubed
1 bunch green onions, thinly sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
4 fresh jalapeno peppers, seeded and minced
1 clove garlic, minced
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon dried sage
1/2 teaspoon ground cumin
1/2 teaspoon ground white pepper
1 tablespoon olive oil
3 tablespoons butter
1/4 cup all-purpose flour
2 cups chicken broth
2 (14 ounce) cans great Northern beans, undrained
DIRECTIONS
In a large skillet, heat olive oil over medium heat. Add chicken, and saute until cooked through. Remove the chicken from the pan.
Saute the onion, red bell pepper, yellow bell pepper, jalapeno chile peppers and garlic in the same skillet. Return the chicken, along with the ginger, salt, sage, cumin and white pepper. Mix thoroughly.
In a separate small saucepan or skillet, melt butter or margarine over medium heat. Stir in flour to make a roux. Whisk in the chicken broth and mix all together. Stir this mixture into the sauteed chicken and vegetables.
Stir in the beans with can liquid, and simmer all over low heat for 15 to 20 minutes or until cooked and heated through.

Ham Hocks and Beans
Ingredients:
2 tablespoons vegetable oil
8 medium smoked ham hocks, about 4 ounces each
2 cups chopped onions
1 pound dried navy white beans
Freshly ground black pepper
2 bay leaves
10 cups water
Salt
In a medium Dutch oven with a lid, over medium heat, add the oil. When the oil is hot, sear the ham hocks in batches, until brown, about 4 to 6 minutes. Remove the ham hock and set aside. Add the onions. Season with pepper. Sauté for 2 minutes. Stir in the beans and bay leaves. Season with pepper. Sauté for 1 minute. Add the reserved ham hocks and water. Bring to a boil and reduce the heat to medium low and simmer for 2 hours, or until the meat falls of the bone and the beans are creamy. Remove the bay leaves and season with salt and pepper.
8 to 10 servings

1 lb large white beans, soaked overnight in water, drained
6 cups chicken broth
2 cloves garlic, minced
2 medium onions, chopped (divided)
1 Tbsp olive oil
2 4-ounce cans chopped green chilies
2 tsp ground cumin
1 1/2 tsp dried oregano
1/4 tsp ground cloves
1/4 tsp cayenne pepper
4 cups diced cooked chicken
3 cups grated Monterey Jack cheese
1 jalapeno or serrano pepper, chopped (optional)
1. Combine beans, chicken broth, garlic and half the onions in a large soup pot and bring to a boil. Reduce heat and simmer until beans are very soft, 3 hours or more. Add additional water (or watered-down broth), if necessary.
2. In a skillet, sauté remaining onions in oil until tender. Add chilies and seasonings and mix thoroughly. Add to bean mixture. Add chicken and continue to simmer 1 hour. Check seasoning, add jalapeno or serrano to level of desired hotness.
3. Serve topped with grated cheese. Garnish with cilantro, chopped fresh tomato, salsa, chopped scallions, and/or guacamole. Serve with fresh warmed flour tortillas or tortilla chips.
8-10 servings

WHITE LIGHTNING CHICKEN CHILI
4 boneless skinless chicken breasts, cubed
2 cans great northern beans, rinsed
1 whole white onion, diced
1 cup frozen white corn
1 yellow bell pepper, diced
1 ½ cups fresh mushrooms, sliced
1 bulb fresh garlic, minced
6 habanera peppers
½ cup white wine
1 can chicken broth
2 tsp. cumin powder
1 tsp. coriander powder
1 tbsp. ground white pepper
3 tbsp. olive oil
1 lime, squeezed for juice
½ cup sour cream
½ cup shredded pepper jack cheese
Heat olive oil in large sauté pan to medium-high heat, and add garlic, onions, and chicken. Sauté for 10-15 minutes or until chicken is no longer pink.
In a large Dutch oven add chicken broth, cumin, coriander, ground white pepper, lime juice, habanera peppers (if mild chili is preferred, use fewer hot peppers, as desired - the quantity given is very hot!), and bring to a boil. Reduce heat to medium, cover with lid, and let simmer for 10-15 minutes. Add the chicken, garlic, and onion mixture, plus the corn, beans, yellow bell pepper, mushrooms, and white wine.
Cover and let simmer for approximately 30-35 minutes.
When finished, remove from heat and stir in the sour cream. Garnish with the shredded pepper jack cheese, and serve with crusty garlic bread

EASY WHITE CHILI
4 white chicken breasts
2 cans white beans
1 can chicken broth
1 tsp. garlic
1 med. onion, chopped
1 can (4 oz.) jalapeno peppers, chopped
3/4 tsp. oregano
1/8 tsp. pepper
1 tsp. cumin
1/8 tsp. cloves
1/2 c. red pepper
Saute first 6 ingredients. Add rest of ingredients. Simmer. Serve with a dollop of sour cream and shredded Jack cheese on top.
