The oil on your skin is produce by the sebaceous glands.
Your hair doesn't get greasy overnight, it is absorbing oil all day and night.
Some people have a problem of waking up with oily hair and some don't. This isn't any kind of medical problem this is just the way it is.
I had your problem when I had hair LOL but as a professional hairstylist I get this same question weekly from both men and women.
Try to avoid shampoos and conditioners with a lot of lotions and conditioning agents in them. Use a clarifying shampoo this will remove most of the oil in the morning an help prolong a "drier" look throughout the day.

its usually just your pores excreting oil over time, and you know a lot of time passes when youre asleep. You also sweat in your sleep, and that may cause your hair to be greasy in the mornings.

Your hair is constantly growing and thus producing oils which come out of your hair follicles. You lay on a pillow and turn your head from side to side on this pillow all night long. Thus smearing the greasy oil to all your hair throught out the night. This is why years ago they wore night caps because they could not afford to constantly wash their pillows.

MAYBE YOUR DIET CONTAINS TOO MUCH GREASY STUFF AND IT SEEPS THRU THE PORES OF THE SKIN. ASK AT A BEAUTY SHOP OR SCHOOL AND GET ADVICE OR ASK AT A DEPT STORE AREA FOR MEN OR WOMEN AND GET ADVICE.
