The way you are describing.. have you ever checked for plugs and a misfire? You will have what some people call a studder while driving (is actually a misfire) and won't usually accelerate too good (like driving a 4 cyl more than a v-8)
My guess would be to look at plugs and wires (or possibly the coil packs if it's a 5.4 as coil packs are known for breaking down and causing the issue)
But I'd want to scan it first to see what codes if any you have... to rule out anything else...

Don't listen to most of the above answer especially to the ones that don't own a ford truck and have never worked on one. Have the mass air flow sensor cleaned maybe replaced. Ford trucks have the mass air flow sensors in the air duct. Remove the big round plastic center piece with a plug going into it, after the filter. Look inside with a bright flash light and you will see one or two small grid like wires in the sensor. The wires are what measures the amount of air flow and tells the computer to add or take away fuel and when they are dirty they will cause this same complaint. Take a can of BRAKE or electrical contact cleaner, spray it down and let it dry. Don’t touch the wires. Usually 15 minutes to dry. I would recommend taking the sensor out and cleaning it but if your not familiar with them it may be difficult. Depending on how bad the sensor is may depend on if it needs to be replaced. The trucks also have a common problem with leaky intake manifolds which will take a shop with a smoke machine to accurately find the leak. Possibly leaving it overnight and checking first thing, cold. Also they have a problem with the PCV hose (elbow) in the rear of the motor being cracked and one more common thing is if they have coil packs on each cylinder one will go out or if water gets into the spark plug holes it will cause the plug(s) to misfire. However you usually get a check engine light on with most of these. If your truck is older than 1996 then disregard everything I said and listen to the above answers.

it also depends on if it is carbuerated*(may be a spelling error :D) or if it is fuel injected, if it has a carbeurator, then it may have too rich or too lean setting... but im not too sure about fuel injections. i have a ford pickup that is fuel injected, and when i hammer on it, then it hesitates, but it soon pickes up... i need to get a tune up, that may help your situation as well

Is it carburated or fuel injected? If it has a carburator check for vacuum leaks around the carb and vacuum hoses. Also check your air filter just in case. If it's fuel injected also check your air filter but more important also check for a vacuum leak around your map sensor or intake system.

Buy the Haynes Repair Manual for your car and year and it will troubleshoot the problem for you.
There are so many things, from a tuneup to timing chain. That is why you need the book.

Could be a million things. My first thought, dirty or clogged fule filter. Depending on the year, could be yer injectors are clogged. Maybe your plugs are not firing properly.....need a lil more detail. Whats it like when it starts up?

i own a repair shop,and it would all depend on the year of it and what its in,if its carburetor it could be several things wrong with it,same as if it was fuel injection,if you had told me what it was in i might could have answered this one for you ,its hard to guess at what you own,good luck,i hope this helps.

I'm almost certain its your TPS (throttle position sensor), that's exactly the symptoms. but if your check engine light isn't on it could be your fuel pump.
