Shepherd's Pie

INGREDIENTS:
2 cups cooked chopped meat<< not ground
1 tablespoon finely chopped onion
2 cups gravy
salt and pepper
2 cups mashed potato, prepared with milk and seasonings as desired
salt and pepper
1/8 teaspoon paprika
1 tablespoon butter

PREPARATION:
Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes.
Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd's pie is thoroughly heated.
This shepherd's pie recipe serves 4.

Are you talking $8 per head?
How bout, a grilled white fish fillet, or steamed,. Coat the fish with herbs and some aromatics(e.g. lemon, onion, shallot, corriander, chilli).
Add some steamed veggies with a cream sauce(maybe something like white sauce)
Stir fry meals are really easy to make and pretty cheap.
Here's a beef stew recipe:
Beef Stew
Prep Time: 20 minutes
Cook Time: 2 hours 15 minutes
Yield: about 4 to 6 main course serves
Vegetable oil for searing
Flour for dredging
2 1/2 pounds beef chuck, cut into 2-inch cubes
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
2 medium onions, cut into sixths
5 cloves garlic, minced
1 tablespoon tomato paste
10 cups cold water, or chicken or beef broth, homemade or low-sodium canned
6 sprigs parsley
6 sprigs fresh thyme
2 bay leaves
1-1/4 pounds medium red potatoes, quartered
4 medium carrots, cut into 2-inch pieces
2 celery stalks, cut into 2-inch pieces
7 canned whole, peeled tomatoes, lightly crushed
1 tablespoon red wine vinegar

Heat a large Dutch oven with a tight-fitting lid over medium-high heat. Pour in enough oil to fill the pan about 1/4-inch deep. Spread flour out on a plate or piece of wax paper. Season half the beef generously with salt and pepper, then dredge in the flour. Shake off the excess flour, and add to the pan. Saute the meat, uncovered, stirring only occasionally, until well-browned, about 8 minutes. Using a slotted spoon, transfer the beef to a plate. Repeat with the remaining beef. Discard the oil and wipe out the pan.
Preheat the oven to 275 degrees F. Return the pot to the stove and melt the butter over medium high heat. Add the onion and cook, stirring, until lightly browned, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until lightly browned, about 1 minute more. Return the beef to the pot and add the water or broth, and bring to a simmer. Using a piece of kitchen twine, tie together the parsley, thyme, and bay leaves and add the bundle to the pot. Season with 2 teaspoons salt and pepper to taste. Cover and transfer to the oven. Stew the meat until tender, about 1 1/2 hours.
Remove the Dutch oven from the oven. Skim the fat from the cooking liquid with a ladle. Add the potatoes, carrots, celery, and the tomatoes, and bring to a simmer. Stew, uncovered, on top of the stove, stirring occasionally, until the liquid has thickened and the beef and vegetables are tender, about 1 hour. Remove and discard the herb bundle. Stir in the vinegar and season with salt and pepper to taste. Divide among bowls and serve immediately.
Cook's Note: Beef chuck, because of its marbling of intra-muscular fat, is the choice for any type of stew. If you can't find chuck cubed for stew in your meat department, buy a thick steak and cut it into 2-inch cubes.

When chicken is on sale, stock up! Cook it and have pasta on the side. Or mix it with the pasta and an alfredo sauce or a red sauce, a jar is only a couple of bucks.

Buy some smoked brats or polish sausage, a pack of 6 costs around $3 and serve them over rice.

Make a big pot of chili. I use tomato juice (family of 6, I use 3 cans), I put burger and ground sausage in it, season it to our liking and we dip peanut butter and jelly sandwiches in it! Yum!

Make loosemeats, brown up your burger, salt and pepper it, add some ketchup, mustard, brown sugar, Worcester sauce, horseradish or whatever you want to get it to how you like it, serve on some crusty rolls or plain old buns.

How many are you feeding???

How about chicken curry. At the market get chicken leg quarters 2lbs usually .99 lb. I can coconut milk $1.69 1 package curry powder (in the Mexican seasoning isle it is the cheapest usually .99). 2 carrots, 1 onion, 2 small white potatoes, 1 bunch cilantro, all very cheap.

Brown lightly floured chicken quarters whole in margarine or butter. set aside once browned.
Cook all veggies chopped except cilantro in the butter/chicken fat.
add 2 tbsp curry powder, coconut milk and add chicken back to pot. add enough water to cover. Cook til chicken is done. Add curry to taste at this point if you like it spicy.
Serve over rice with chopped cilantro on top and diced dill pickles on the side.
A different taste that is Delicious and super inexpensive.
Let me know how you like it.

My favorite since i'm a full time student and have 2 jobs are things that are premarinated. There is this pork lion that I buy and it's like $6 and it feeds me for 2 or 3 days. I get some good side dishes to go with it like a nice green salad and cottage cheese with fruit on top or whatever your liking is. Then the next day I'll have it on a sandwich for lunch. Its great! It only takes like 45 min to cook and you could be cooking your side dishes while thats in the oven.

First off start with whole foods. Things like roast chicken and roast meats can a long way with many different recipes.

Also instead of buying baby food, make your own! It is better and fresher It also costs less than what you are buying and probably wasting some of.

This website should be really helpful even though it has a silly name like hillbilly. Trust me. I have to budge 50 dollars for myself every two weeks. That's breakfast, lunch, dinner and snacks. http://www.hillbillyhousewife.com/

Chicken (off the bone) Fry in tabasco sauce until the pink is gone. Add diced jalopena, red, green bell peppers and enough water to cover. Simmer for 20 minutes (until water is almost all gone) in covered pan. Stir occasionally. Serve over rice.

Quesadilla's. Marinade chicken pieces in a bottle marinade such as "tequila-lime". Cook in a non-stick skillet until done. Layer between tortilla's with pepperjack cheese, green onions and diced tomatoes. Serve with guacamole (or avocado's) and sour cream.

or...buy a jar of spaghetti sauce, heat it up, cook your favorite pasta and serve w/ store bought turkey meatballs (pre-cooked).

Fajita's are simple too. They even sell the kits in the meat dept. of your grocery store. Throw everything in a skillet and heat up some tortilla's. Done.
