Soft Lemon Drops
Cookie Ingredients:
1 cup granulated sugar
1/2 cup Butter, softened
1/2 cup Sour Cream
2 large eggs
2 teaspoons grated lemon peel
1/2 teaspoon lemon extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Glaze Ingredients:
1 cup powdered sugar
1 to 2 tablespoons lemon juice
Heat oven to 350°F. Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy. Add sour cream, eggs, lemon peel and lemon extract; continue beating until well mixed. Reduce speed to low; add flour, baking powder and salt. Beat, scraping bowl often, until well mixed.
Drop dough by rounded teaspoonfuls 2 inches apart onto greased cookie sheets. Bake for 10 to 12 minutes or until lightly browned. Cool completely.
Combine powdered sugar and enough lemon juice for desired glazing consistency in small bowl. Frost cooled cookies with glaze.
Makes 3 dozen cookies.

Lemon Squares
A recipe for lemon squares, a popular bar cookie dessert made with a cookie crust and lemony topping.
INGREDIENTS:
2 cups flour
1/2 cup confectioners' sugar
2 sticks butter
2 cups sugar
1 tablespoon flour
1 teaspoon baking powder
1/4 teaspoon salt
4 eggs, well beaten
1 heaping tablespoon grated lemon rind
1/4 cup lemon juice
PREPARATION:
Sift flour and powdered sugar together. Cut in butter until well blended. Press mixture over bottom of a 9 by 13 by 2-inch pan. Bake about 25 minutes at 300° until lightly browned. Combine remaining ingredients and spread on top of the baked crust.
Bake at 350° for 25 to 30 minutes. Sprinkle with powdered sugar.
Makes about 12 servings.

Lemon Blossoms
Ingredients
18 1/2-ounce package yellow cake mix
3 1/2-ounce package instant lemon pudding mix
4 large eggs
3/4 cup vegetable oil
Glaze:
4 cups confectioners' sugar
1/3 cup fresh lemon juice
1 lemon, zested
3 tablespoons vegetable oil
3 tablespoons water
Method
Preheat the oven to 350°
Spray miniature muffin tins with vegetable oil cooking spray. Combine the cake mix, pudding mix, eggs and oil and blend well with an electric mixer until smooth, about 2 minutes. Pour a small amount of batter, filling each muffin tin half way. Bake for 12 minutes. Turn out onto a tea towel “
To make the glaze, sift the sugar into a mixing bowl. Add the lemon juice, zest, oil, and 3 tablespoons water. Mix with a spoon until smooth.
With fingers, dip the cupcakes into the glaze while they're still warm, covering as much of the cake as possible, or spoon the glaze over the warm cupcakes, turning them to completely coat. Place on wire racks with waxed paper underneath to catch any drips. Let the glaze set thoroughly, about 1 hour, before storing in containers with tight-fitting lids.

Moist & Chewy Lemon Cake Cookies
Category: Cookies & Bars
Prep Time: 15 minutes
Bake Time: 7-10
Recipe Yield: 3 dozen
Ingredients:
· 1 box Duncan Lemon Supreme or Classic White cake mix
· 1 jumbo or 2 ex-large egg, or 1/2 cup egg sub.
· 1 stick softened butter or margarine
· 1 cup flour all purpose
· 2 large lemons, juiced
· 1 small box lemon Jell-O, regular or sugar free
· 1 can of Duncan Hines Vanilla frosting
· (You may use Duncan Hines Lemon frosting)
· (You may use Duncan Hines Yellow cake mix)
· Additional fresh lemon juice
Directions:
1: Mix cake mix, eggs or sub., flour, juice from lemons, 3/4 box of Jell-O.
2: Mix until dough ball forms.
3: Drop teaspoonfuls on cookie sheet.
4: Bake in 350 F oven for 7-10 minutes chewy 10-12 minutes crisp.
5: Mix frosting and remaining Jell-O.
6: Cool cookies on rack.
7: Frost , drizzle with additional lemon juice if desired.
8: Enjoy!
