I followed the recipe and it turned out to be alot. The second part i have rising right now and i was wondering if i could stick it in the freezer when its done rising and just bake it when i want more? or do i have to bake it right away?

You should bake the bread now if you want to make bread dough for freezing you need to handle quite differant . dough for freezing
should start out with very cold ingredients
with more yeast than normal say 10% more
omit the first rise . make the dough into the desired shape brush with oil or spray with pam wrap with parchment paper then wrap in foil place in the coldest part of the freezer .When you are ready to bake it
take out of freezer un wrap it place in bake pan cover with a cloth not plastic or foil . Sit in a warm place and let rise .When it has risen bake as usual . I hope this helped you

Bake and then freeze. Wrap very well befoer putting in freezer to avoid burning or other flavors

Personally I would go ahead and bake it, wrap well for freezing. Just try to eat within a month for best flavor.

If you put it in the freezer right after it's done rising but not done baking then your bread might deflate. I would just bake it all the way and wrap it really well w/plastic wrap. after you put the plastic wrap on put alum. foil over it and put it in the fridge.

I would bake it right away and THEN freeze it. That's what I always do with Christmas cookies, and just take them out whenever you want it. (Just let them thaw first and they're good as new!)
