What are some good schools in USA or Canada for music writing/producing?

Depends what type of composing or producing you want to do.

For pop music, you might want to try the Berklee College of Music in Boston.

For classical, big name conservatories such as Eastman, Hartt, Peabody, Boston University, etc. tend to have good composition programs.

For producing, you probably want to go with a degree in music technology. Most schools with larger conservatories/schools of music will have music technology majors. UMASS Lowell has a sound recording major that is fairly unique as I understand it.
