A good one. The general rule of thumb is to cook with a wine you would be happy drinking, because your finished dish is only going to be as good as the ingredients that go into it.
If a recipe calls for dry white wine without mentioning the type of wine, use any good dry white wine such as Sauvignon Blanc, if you are a complete beginner, or a Chardonnay if you are a little more experienced and know how to cope with the relatively larger degree of acidity surfacing when Chardonnay wine is reduced. If Sauvignon and Chardonnay are too expensive, use generic wine that tastes round in the mouth just after opening the bottle.

i usually use whatever wine i will be having for dinner afterwards. something I am willing to drink. Usually I buy Sauvignon Blanc or Chardonnay, no more than $10 - 12 per bottle. Most recipes call for dry wine, so avoid things like Riesling or Gewurztraminer. Brands like Fetzer Valley Oaks, Kendall-Jackson Vintner's Reserve, etc. are good cooking wines. They are semi decent drinking wines.
when you cook with wine, you concentrate the flavor, so if you start with a weak wine, like two buck chuck for example, you will have weak flavors in the end. Start out with a better wine and you will get better results.
But really, whatever wine you want to use is fine.

I buy those small 4-bottle packages of wine by Sutter Home or other makers. THey are the perfect size for cooking, dont' require you to open a large bottle, but only a small one that holds about 3/4 cup of wine. Try all hte differnt brands to see what you like.
