Omelettes have vegetables! So do potato casseroles!

But for the most part, I guess people are thinking quick energy (fruits, starches) and endurance (proteins) rather than fiber and nutrients that veggies offer.

I live in New England and there are two main breakfast veggies--potatoes and beans. However, I think you're right there are very few vegetables for breakfast. It seems to be more of a fruit meal.

I agree. I love grilled tomato for breakfast, and being a vegetarian, I often have veggies for breakfast, but most dont beyond a potato hash brown. People get used to certain things, and dont like thinking outside the box

There are some types of breakfast dishes that include vegetables, such as omlettes. A Denver omlette has peppers, tomatoes, and onions. I'm sure you can incorporate vegetables into breakfast, I just think that we're used to starches and sweets.
