Chocolate Ice Cream

3 cups half-and-half
6 oz. bittersweet chocolate, finely chopped
(about 1 1/3 cups)
5 egg yolks
1 cup sugar
Pinch of salt
1 tsp. vanilla extract

In a saucepan over medium heat, warm the half-and-half until bubbles form around the edges of the pan. Remove from the heat, add the chocolate and stir until smooth and blended.
In a large bowl, whisk together the egg yolks, sugar and salt until blended. Slowly add the chocolate cream, whisking constantly until fully incorporated.
Pour the mixture into the top pan of a double boiler. Set the pan over but not touching simmering water in the bottom pan. Cook, stirring constantly with a wooden spoon, until a finger drawn across the back of the spoon leaves a path, 10 to 12 minutes; do not allow the custard to boil. Pour the custard through a fine-mesh sieve set over a clean bowl and stir in the vanilla. Nestle the bowl in a larger one filled halfway with ice and water. Cool the custard, stirring occasionally, about 30 minutes.
Transfer the custard to an ice cream maker and freeze according to the manufacturer's instructions. Transfer the ice cream to a chilled container, cover and freeze until firm, 3 to 4 hours, before serving.

Get a few pounds of ice, break it almost to powder, throw a large handful and a half of salt among it. You must prepare it in a part of the house where as little of the warm air comes as you can possibly contrive. The ice and salt being in a bucket, put your cream into an ice-pot, and cover it; immerse it in the ice, and draw that round the pot ,so as to touch every possibeel part.In a few minutes put a spatula or spoon in , and stir it well, removing the parts that ice round the edge to the centre. If the ice cream, or water, be in a from, shut the bottom close, and move the whole in the ice, as you cannot use a spoon to that without danger of waste. There should be holes in the bucket, to let off the ice as it thaws.

Note. When any fluid tends towards cold, the moving it quickly accelerates the cold; and likewise, when any fluid is tending to heat, stiring it will facilitate its boiling.

Ice Creams
Mix the juice of the fruits with as much sugar as will be wanted, before you add cream, which should be of middling richness.

you can get recipies on the web for easy homemaid ice cream, alot of them have pudding mix in them.Another cool way that kids can do, is get a plastic bag(strong) add 1 cup milk, 1/2 cup of sugar, dash of salt and a dash of vanilla. Put that bag inside a larger bag(very strong) then fill the larger bag with ice, then you get your kids to toss it back and forth for about 5 to 10 minutes and there you have it...a small portion of ice cream in a bag, of course you can do any flavor you want or experiement with the quantites...it tastes like snow ice cream..let me know if you try it!

One of the simplest is 1 can of Sweetened Condensed Milk (not evaporated) and 1 (12 oz) can of fruit-flavored soda. Mix well and freeze. This is also good w/ a can of root beer for a root beer float flavor!
