will honey crystalize well like sugar does?
i wanna make energy bar, what if i replace sugar with honey?
will it go stiff or will the energy bar break apart?

You can replace sugar with honey without any problem, just reduce the liquid in the recipe, and for best results do all this:

* Substitute 1/2 cup with 1/2 cup minus 1 Tbs sugar (125 ml - 15 ml = 110 ml).

* For baking reduce the liquid in the recipe by 1-2 Tbs and add 1/4 tsp baking soda to neutralize acidity - makes baked goods moister and more pleasing.

* Reduce oven temperature by 25° F (14° C).

Honey is a different sugar w/ a different chemical structure than sucrose (table sugar). Honey will not react the same way as sucrose.

I'd suggest you find an energy bar recipe that calls for honey to begin with.

No any recipe for any engery bar usually does have oney in it. Thre are all kinds of recipes out there so enjoy when you find something that sounds good to you. Don't thnk there is a energy bar outthere that isn't a good thing. Have fun with it.
