I have a very simple mead that i make that always gets good reviews. basically, it's 1 gallon of apple juice (not cider) to 5 lbs. of honey. you don't have to boil the wort, just heat it enough to liquefy the honey. it will take longer to ferment than beer, but the high amounts of sugar in the honey and apple juice will make it pretty potent.

I would love one that represents harvest/autumn and a taste to go with hickory or the smell of fall and the wood burning stoves or fireplaces.

Everyone envisions sitting in front of a fire drinking hot cocoa, but what about the perfect beer?

My biggest winner in homebrew competitions is a wee heavy called McSpoon's Scotch Ale. You can google the name and get the recipe.
