SOUR CREAM ICE CREAM

1 1/4 cups sour cream
1/2 cup powdered sugar
1 tablespoon fresh lemon juice
1 1/2 teaspoons vanilla extract
1 1/4 cups sugar
6 large egg yolks
2 cups whipping cream
1 cup whole milk

Whisk sour cream, powdered sugar, lemon juice and vanilla in small bowl to blend. Cover and refrigerate until ready to use. Whisk 1 1/4 cups sugar and yolks in medium bowl to blend. Bring cream and milk to simmer in large saucepan. Gradually whisk hot cream mixture into yolk mixture; return to same saucepan. Stir over medium heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes (do not boil). Pour into large bowl. Refrigerate until cool, whisking occasionally, about 45 minutes. Mix in sour cream mixture.

Process custard in ice cream maker according to manufacturer's instructions. Transfer to bowl; cover and freeze. (Can be made 3 days ahead. Keep frozen.)

There are a ton of things you can do with it.

Mix with a package of ranch dressing, veggie soup, or onion soup mix for a great dip for chips or veggies.

Mix in a little lime juice, cilantro and onion for a great sauce for Mexican dishes, like fish tacos, tortilla soup, black beans, or burritos.

Look for recipes that call for sour cream as an ingredient, like stroganoff.

You can make Smashed Potatoes. Roast potatoes in the oven with a little bit of olive oil, salt, pepper, and some chopped fresh herbs, like rosemary or thyme. Once done, throw on some sour cream and mash them a little bit. You just want them soft, but still have big chunks of potato left. It's a great change of pace to your typical everyday mashed potatoes.

Sour Cream Chicken Enchiladas are a wonderful dish too. Mix shredded cooked chicken, olives, onions, mushrooms, green chilies, sour cream, 3/4 can of cream of chicken soup together. Fill corn tortillas and roll. Mix remaining chicken soup, sour cream and milk together to form a sauce to pour over top of enchiladas, top with cheese and bake until heated through, and cheese is lightly browned and bubbly.

Well...it can be used in Beef Stroganoff. Of course thats an awful lot of sour cream. You can also make a sour cream cake.Oh wait....I have a cheesecake recipie if you're interested. But you'll need the following:

cream cheese
a graham cracker crust (I get mine store bought)
vanilla extract
sugar
eggs
and of course each 9" cheesecake will require 1 container (16 ounce I think) of sour cream.

I use sour cream as salad dressing. Mix in some salsa, and it's a nice creamy and a little spicy dressing. Low calorie, too!

I like sour cream on almost everything!

Sour Cream Cut Out Cookies

INGREDIENTS
1 cup butter, softened
1 cup white sugar
2 eggs
1 cup sour cream
1 1/2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
6 1/2 cups cake flour
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the sour cream and vanilla. Stir in baking soda, baking powder and salt; gradually mix in flour to form a dough that is stiff enough to roll out. More or less flour may be necessary.
Roll out dough on a lightly floured surface and cut into shapes using cookie cutters. Place cookies 2 inches apart on ungreased cookie sheets.
Bake for 10 minutes in the preheated oven, or until firm and the center appears dry. Cookies will stay white, so be careful not to overbake.

Use them to make a sour cream coffeee cake(s); I use it to make my mashed potatoes; have a taco party; and put it out for those who like it on tacos; make a taco dip; have baked potatoes, etc etc; I also use it to make fried chicken (for the coating). Go to www.allrecipes.com and put in that particular ingredient. It will come up with a lot of ideas. Here's the cake(s):
SOUR CREAM COFFEE CAKE

1 cup sugar
½ cup softened butter
2 eggs
1 cup sour cream
1 tsp. almond flavoring
1½ cups flour
1 tsp. baking powder
¼ tsp. soda

Topping:

½ cup pecans or walnuts
¼ cup sugar
1 tsp. cinnamon

Cream one cup sugar, ½ cup softened butter, add 2 eggs, one cup sour cream, one tsp. of almond flavoring.

Mix 1 ½ cups four, 1 tsp baking powder, ¼ tsp. soda. Add to creamed mixture.

Pour ½ of batter divided evenly between two round pans, or one 9 x 13, then half of topping, then rest of batter, and then rest of topping.

I double recipe and get 4 coffee cakes in 8 inch aluminum pans.

Bake at 350 degrees for 30 minutes although I check center in 20 minutes because ovens vary.

When out of oven sprinkle with powdered sugar and enjoy!

You can make dessert with it or use it for beef stroganoff. If you need recipes do an ingredient search (sour cream as your ingredient) at allrecipes.com.
Everything with sour cream in it will come up.
