The only reason that your head and neck hurt is because you have not switched all your stomach muscles on in order to be able to pull yourself up, meaning you aren't getting full effect from the sit up. I recommend using a ball and doing smaller crunches rather than trying to do full ones. You could always try reversing them by lifting both legs up off the ground together, this will strengthen your abs. Relax your neck and let your tummy do the work.

Its just bad techniques. Crunches are far more effective and less of a strain to your lower muscles.
1. lie with your back flat against the floor, knees bent, feet flat.
2. put both hands behind your head, but dont interlace your fingers
3. do not let your hands lift your upper body for you, this is whats making it painful!
4. raise your upper body without your hands pushing you, as you lift make sure your head is still facing the ceiling - and not your knees!
5. suck in your abs as you do the squeeze, and keep your lower back firm.
You should find these techniques will take the strain off your head and neck, good luck!

buy one of those balance balls and do the crunches that come with the instructions - much better, much easier, and definitely more thorough!
