The basic flavour is similar, except chinese mustard is so much more potent. Also its a different kind of "hot" that affects the palette, why does it clear the sinuses so thoroughly?

Dujon if French. Chinese mustard is way different even though it doesn have the same kindd of taste. It's got a few chinese peppers in it and that explains the hot affect in your mouth. They clear your sinuses because of a natural chemical in peppers called capsaicin (think that's how you spell it). It also works great for allergies. Look it up on the web to learn more!

If you ever made mustard before you will know that it is all basic the same except they put in horseradish in their and we don't. That is why they have a kick to it. Mustard is very easy to make they have the dry in the store than add vinegar whatever spices you want.

Both mustards are essentially mustard powder and a liquid... Dijon uses wine while chinese mustard used water... so both give the true mustard heat and taste while regular hot dog mustard is different since it uses tumeric (yellow) and vinegar. The tumeric gives regular yellow mustard a different taste.

Your right they are similar, because of the spiciness for me. As for the Chinese mustard...I think it's got horseradish in it, which definitely cleans out the sinuses.
