I was at Sam's club and I tried a delicious, premade Cheese Cake called Paradise Cheese cake, it had Coconut and Pinapple in it, I would love the recipe if anyone has any ideas, I want to learn to make it myself. The name of the Company it was made by was Atlanta Cheese Cakes, it was a very good cake and I would love to learn to make it.

Sounds like a pina colada cheesecake:

Ingredients: Metric Units
3 c. graham cracker crumbs
1 c. shredded unsweetened coconut
2 1/2 c. sugar
6 Tbsp. butter, melted
2 1/2 c. coarsely chopped pineapple
1/4 c. light brown sugar
3 lbs. cream cheese
6 eggs
1/2 c. coconut milk
2 ripe bananas, sliced
Directions:
Mix cracker crumbs, 1/2 c. coconut, 1/4 c. sugar, butter. Press into 10x3 springform pan pan. Chill 15 minutes.

Preheat oven 350°F.

Combine pineapple and brown sugar in a pan and cook over medium heat until soft, syrupy. Drain syrup, set aside.

Beat together cream cheese, sugar until creamy, like frosting. Add eggs, then coconut milk.

Pour half cream cheese mixture into crust. Add a layer of the pineapple mixture, then a layer of sliced bananas, then another layer of the cream cheese mixture. Garnish with coconut.

Bake 1 1/2 hours. Turn off oven and crack open oven door. Let cool in oven. Chill overnight.

(Okay, so this would be a nice finish for an "escape to the islands" meal - but I admit is probably not on the bona fide list for Caribbean cuisine.)

Pineapple Cheesecake
INGREDIENTS
1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
2 (15 ounce) cans crushed pineapple, drained
1 cup coconut
1 3/4 cups frozen whipped topping, thawed
1 (9 inch) prepared graham cracker crust
DIRECTIONS
In a large bowl, mix cream cheese and sugar together. Stir in 1 can of pineapple, coconut, and whipped topping to cream cheese mixture. Mix until smooth.
Pour mixture into crust and top with other can of pineapple. Cover and chill for 2 hours.

this recipe is AMAZING..sounds like what you are looking for too... its not the most simple cheesecake to make but its SOO worth the extra work!! enjoy!!

6 tablespoons unsalted butter, melted
1 3/4 cups graham cracker crumbs
3/4 cup chopped pecans, toasted
1 tablespoon sugar
3 (8 ounce) packages cream cheese, softened
1/2 cup sugar
5 large eggs
1 (8 ounce) can crushed pineapple, drained
1 cup cream of coconut
1 cup sour cream
1/3 cup light rum
4 teaspoons coconut extract
For Glaze
1 tablespoon cornstarch
1 tablespoon water
1 (8 ounce) can crushed pineapple
1/4 cup sugar
2 tablespoons lemon juice
For Garnish
whipped cream
toasted coconut

Stir together butter, graham cracker crumbs, chopped pecans and sugar.
Press into bottom and 1 1/2 inches up sides of a lightly greased 10-inch springform pan.
Beat cream cheese and 1/2 cup sugar at medium speed with electric mixer for 3minutes or until fluffy.
Add eggs one at a time, beating well after each.
Add pineapple, cream of coconut, sour cream, light rum and coconut extract.
Beat until blended.
Pour mixture into crust.
Bake at 325°F for 1 hour and 15 minutes or until center is almost set.
Cool on a wire rack.
For Glaze: Stir together cornstarch and water until smooth.
Combine cornstarch mixture with crushed pineapple, sugar and lemon juice in a saucepan over medium heat.
Cook, stirring constantly, for 5 minutes or until mixture is thickened and bubbly.
Remove from heat and let cool completely.
When glaze is cooled, spread glaze over top of cheesecake.
Cover and chill for at least 8 hours.
Garnish if desired before serving.
