Parsley is an excellent source of trace minerals and chlorophyl, and helps neutralize odors in the body. I juice about 4 big sprigs with cucumber, carrots, and celery a couple of times a day. Its good stuff! Sometimes I just nibble it raw, but it is an aquired taste, for certain

I have potted parsley in my living room that I munch on all the time. I found that its also good for freshening breath. Parsley is my favourite snack too when I feel the munchies coming on, I really don't know how nutritious it is, but I do know I eat healthier just having it in my house.

(I also have a cat named parsley and I carried it in my bouquet when I got married and ate some)

Parsley, like just about any other vegetable or herb, is good for you, although it doesn't outshine any others in particular.

You don't want to eat large amounts of it or it will keep you in the bathroom because it is a natural diuretic. It also contains a very high amount of chlorophyll which makes it a very good breath freshener.

It's high in oxalic acid though, which is connected to the formation of kidney stones so constant intake of it in large amounts is not recommended.

Generally speaking, one serving is about 10 stems or 10 grams which isn't a great deal.
