There may be a tiny bit more vitamin loss if the water is VERY hot and the washing period is prolonged. But most people just rinse briefly under lukewarm/cool water to remove pesticides and dirt.
Cooking is actually where vitamin loss can occur, especially if the vegetables are boiled. Baking or broiling (especially if the vegetables are protected in foil or other wraps), will decrease the mineral loss. And, of course, salads, where raw vegetables are consumed, are the best.
Overall, I wouldn't worry too much about the hot water practice, unless it is really extreme. But even with boiling or a super hot wash, not all vitamins are lost, just decreased. So don't let that discourage you from eating your veggies! ;-)

No, all you do is you rinse it under the water to get rid of the soil etc. right? so the veggies can't loose their vitamins during such a short period of exposing it to hot water and besides, it's hot water you use, not boiling water! Veggies only start to loose their vitamins when it has been exposed to excessive cooking, in other words when you cook it for too long and it becomes soggy.

unless the water is excessively hot, as in near boiling, i wouldn't think there would be much vitamin loss. however, i don't recommend using hot water to cook or clean food. Hot water is stored/heated in a tank that may contain minerals and sediment that are undesirable in cooking. always wash/cook foods using cold water, as that comes straight from the fresh water source.

no not at all the vitamins are inside the vegetable the only way is if the vegetable is cut open and you wash it in dirty water

duhhh ur not suppose to wash them with hot water....
theyll just cook with boiling water after u cook nthem...
plus they wont taste as good.
