Ham Dinner! buy a nice quality pre-cooked sliced ham from the market. it's easy as anything else and hard to mess up. make 2 starches (potatoes, sweet potatoes, rice, etc.) and 2 vegetables (green beans, corn, etc). don't forget about some rolls, once again brown 'n serve are the easiest. Salad in a bag are really fresh and they are portioned for you already, no guessing or mixing. Bake a cake or pie with some ice cream. You don't have to get all pre- prepared items, but see what items are of good quality and how much time you have. everything that i wrote down here should take no more than 2.5 hrs.

Get a couple 3# beef roasts, cut in pieces and put in a crockpot. Add 2 tsp of garlic powder, 1 c water, and 2 T of Italian seasoning & cook all day the day before.
In the morning before the party, shred the meat & put back into the crockpot to heat up until dinner. Serve this Italian beef on big crusty rolls, with some beans and chips or potato or macaroni salad.

Chicken Scallopine
Use boneless, skinless chicken breasts or thighs. Shake the chicken in a ziplock type bag with flour, salt and pepper to taste. Put a couple of tablespoons of olive oil in a skillet n medium heat and brown the chicken in it, then cook about five minutes on each side. Take the chicken out and put it on a platter or in a bowl. with the pan still on the stove, add a little crushed or finely minced garlic. Then after about twenty seconds, add about a cup of white wine, and a half cup of lemon juice. Then as that heats up, add sliced sweet onions (about 1 onion, cut in half lengthwise and then sliced crosswise in 1/8 inch thick slices) If you like, add thin bell pepper strips. Cook about ten minutes on medium, then stir in 1 cup of chicken broth, mixed with a rounded tablespoon of corn starch, stirred in well, and stirred at the last minute (the corn starch piles up on the bottom if you don't keep it stirred in) Stir, cook a few minutes, and pour all that good stuff over the chicken. Goes very well with rice and pasta and a salad or greens or a veggie. Variations can include adding chopped pineapple to the onions and peppers. If you prep everything before hand, about 30 minutes total.

Spaghetti with a nice homemade meatsauce, garlic bread ( you can get loaves that just need to be put in the oven ), and tossed salad. Ice Cream for dessert. Of course the sauce will be the most work, fix it the day before and the flavors will set up well. The net has multiple recepies or you might have one. Have fun.

How about a big pot of chili in the slow cooker, that way you don't have to worry about it too much. You can serve with a different assortment of toppings: green onion, shredded cheese, corn chips, sour cream, etc. If you want to make the meal more complete, put out corn bread and a big bowl of salad. For a good slow cooker recipe, go to foodnetwork.com and look for Paula Dean's Taco Soup recipe. It's pretty similar to a chili, and my family loves it!

My favorite meal to prepare when expecting a huge crowd is something Italian. Think a huge dish of lasagna, or maybe some spaghetti and meat sauce, all served with salad and some bread. It is usually the cheapest, quickest, and heartiest things to cook for a huge group and who doesn't like Italian?

All our family get togethers have been good since we always have a nice recipe to use. Theres no other way to make someone satisfied unless they've had a good meal.

Try some green bean casserole with potatoes. It's a good meal to make and isn't like the turkey dinner for thanksgiving.

If it's a small family, you can cook a small full chicken in a crock pot with some vegetables. Add some Uncle Ben's rice on the side (I love the roast chicken-flavored), and you're good to go with minimal clean-up.
