you need to put a weight on it .They sell weights for bacon or you can get a small brick and wrap it with foil.

If frying in a pan, choose a pan large enough to accommodate the full length of the bacon strips. The more room you have to work with, the better your chance of success.
Lay the bacon in the pan or on the skillet BEFORE turning on the heat. Do not let slices overlap - not even a little.
Cook on a setting slightly above medium. Too much heat means the bacon will cook too quickly. A cooking time that exceeds five minutes is not only fine, it is preferred.
As the bacon begins to shrink, flip each slice separately with a fork - make sure the slices remain as flat as possible after flipping. At this point, flip each slice at least once every 45 seconds

Bacon cooked in the microwave will stay flat. Place a paper towel on a plate or microwavable pan. Lay out bacon. You can do three layers of bacon with paper towels between each and on top. Microwave 3 or 4 minutes. Check for desired doneness. Microwave more if necessary. Do not overcook as bacon will burn easily.

Buy a bacon press from a restaurant supply store. After turning the bacon a few times, put the press on it. Be careful not to leave the press on too long or the bacon will burn.
I used to work in restaurants and have used bacon presses quite often. I want to buy a smaller version for my own use.

Place bacon strips in a frying pan and place another frying pan over the bacon causing the weight to come down and flatten the bacon. It will also cook it from both sides if you pre heat the top pan. You can also cook it in the George Foreman grill if you have one.

I find that if I want to keep bacon flat while it is cooking, you need to keep something with pressure on it. A spatula keeping pressure on it works, and so does a wooden cutting board wrapped in foil. It also works best when cooking on an entirely flat surface as a griddle.

The only way I know of is to buy a Bacon Press or just buy the pre-cooked kind and then zap it between 2 paper towels in the microwave.

I use center cut bacon because it has less fat and start it in a cold electric skillet. Just turn the skillet on and leave the bacon alone until it is starting to look brown, then turn once, twice if you have to.

I've found baking it on a foil lined cookie sheet for 10 minutes or so at 400 degrees keeps it flat. Just make sure you check on it a lot and turn it once when it starts crisping, and use a cookies sheet with sides! Good luck!
