This cake got rave reviews from my friends and family. It is time consuming to do the apples, so don't wait until the last minute to start this. :)
Heavenly Apple Cake
3 cups unbleached all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
3 small Granny Smith apples
3 small Gala apples
Juice of 1/2 lemon
4 large eggs
1 cup vegetable oil
2 cups sugar
1 tablespoon vanilla extract
1/2 cup orange juice
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon cloves (ground)
Preheat the oven to 350°. Grease and flour a 9 x 13 pan.
Mix the flour, salt, and baking powder in a bowl and set aside.
Peel, core, and slice the apples into eighths and place in another bowl. Sprinkle with lemon juice.
In a third bowl, beat the eggs until foamy. Add the vegetable oil and 1 3/4 cups of the sugar; beat well. Stir in the vanilla.
To the egg mixture; alternately add the dry ingredients and the orange juice. Pour half the batter into the prepared pan. Cover with half the sliced apples.
In a small bowl, mix the remaining 1/4 cup sugar with the cinnamon and sprinkle half over the apples. Cover with the remaining batter.
Starting at the outside of the pan, neatly place the remaining apple slices in overlapping concentric circles. Sprinkle with the remaining cinnamon sugar mixture.
Put some aluminum foil on the bottom of the oven in case the batter leaks. Bake the cake on the middle rack for about an hour, or until a toothpick inserted in the center comes out clean.
Cool on a rack before you carefully remove the cake from the pan.

* 3 apples - peeled, cored and sliced
* 1 cup vegetable oil
* 1/2 cup orange juice
* 2 1/2 teaspoons vanilla extract
* 5 tablespoons white sugar
* 2 teaspoons ground cinnamon
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch tube pan.
2. Sprinkle sliced apples with 5 tablespoons white sugar and the ground cinnamon. Toss to coat and set aside.
3. Mix the flour, eggs, 2 1/2 cups sugar, baking powder, salt, vegetable oil, orange juice and vanilla until well blended. Batter will be fairly stiff.
4. Pour 1/2 of the batter into the prepared pan. Place the apple mixture over the batter then pour the remaining batter over the top.
5. Bake at 350 degrees F (175 degrees C) for 60 to 80 minutes. Let cake cool in pan.

3 to 5 tsp cinnamon
3 c. flour
2 c. sugar
4 eggs
1 c. oil (not olive oil)
1/4 c. orange juice
2 tsp. vanilla
4 tsp. baking powder
1/2 tsp. salt
Directions
Peel, quarter, core and slice apples about 1/8 inch thick. Slicing the quarters the short way yields more apple pieces. Mix with cinnamon.
Preheat oven to 375 degrees. Grease and flour a tube pan. Combine rest of ingredients and mix well on low spead. Alternate layers of apples and batter in the tube pan, ending with apples. (Or gently mix the apples in directly, reserving a handful for the top.)
If the tube pan is especially dark, put a piece of tin foil under the pan and poke a hole for the tube.
Bake 1 to 1 1/4 hours until a pick inserted comes out clean.

Jewish Apple Cake:

12 servings
5 apples, diced in large pieces
5 tablespoons sugar
2 teaspoons cinnamon
Cake
3 cups unsifted flour

1. Filling: Mix apple pieces, sugar and cinnamon.
2. Cake: Add wet ingredients.
3. Add dry ingredients to wet.
4. Batter will be thick.
5. Grease and flour a 10 inch tube pan Add half the batter to pan.
6. Add half the apples.
7. Add the other half of batter and top with the apples.
8. Bake at 350F for 1 ½ hours.
