I like you is NOT "te quiero", never has been. Why do some people believe that?
I love you = Te quiero
I like you = Me gustas (romantic) OR Me caes bien (friendly)
So in this case:
Me gustas mucho y me encantaría conocerte mejor.
PS:
I think some people get confused between I love you and I like you because in Spanish there's also "te amo", which is a stronger I love you:
Te quiero = I love you. Can be used both romantically or friendly. It could also be "I care for you".
But I don't know a single person in any Spanish-speaking country that would use it meaning only "I like you".
Te amo = I love you (stronger). It's usually used romantically. It's more like "I'm in love with you".

I would translate it as: "Me gustas mucho y me gustarÃa conocerte mejor" not as "Te quiero" because this last is more oriented for a person who you already know well and you love him/her.

For like friends or a guy/girl you like but you just met:
"Me caes muy bien y me gustaria conocerte mejor" (this is the exact translation of your phrase)
For a person that you are attracted to:
"Me encantas y me gustaria seguir conociendote"
"Me fascinas y me encantaria conocerte mas"
