I am looking for a recipe (and the name) for the sauce Greek restaurants usually put on their Gyros. I believe it is some kind of cucumber sauce with sour cream.

Title: Tzatziki Sauce for Gyros

Ingredients:

2 sm cucumbers
salt, to taste
1 1/4 cup yogurt, plain
2 tbl olive oil
1 tbl lemon juice
white pepper, to taste
3 clv garlic, or more
1/4 cup fresh mint leaves


Method:
Use fresh mint leaves, shredded, 2 tablespoons dried mint, crushed or 1/4 cup coarsely chopped flat-leaf parsley. Use more or less garlic, minced, to your preference. Peel, seed and dice cucumbers. Sprinkle with salt and set aside to drain. Combine yogurt, olive oil, fresh lemon juice, pepper and garlic in large bowl. Cover and refrigerate.

Just before serving, beat yogurt sauce with wooden spoon until smooth.

Have fresh mint torn into small pieces. Dry cucumber by gently squeezing between paper towels. Combine cucumbers with mint leaves and yogurt mixture. Add salt and pepper to taste. Use with Gyros of all kinds. Can also be used as dippers with pita bread cut into wedges and baked for few minutes until crisp.

Cucumber Yogurt Sauce
8-ounce carton plain low-fat yogurt
1/3 cup seeded, chopped cucumber
2 tablespoons finely chopped onion
1 clove garlic, crushed
1 teaspoon sugar

In medium bowl, combine all ingredients; mix well. Serve with Lamb Gyros.

Tzatziki Sauce

INGREDIENTS

* 2 cups plain yogurt
* 2 cloves crushed garlic
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/4 cup chopped fresh mint leaves
* 1 large cucumber - peeled, seeded and shredded

DIRECTIONS

1. Use a cheese cloth to strain the yogurt over a bowl for 3 to 4 hours, until most of the water has drained.
2. Press excess liquid out of the shredded cucumber. In a medium bowl, stir together the cucumber and strained yogurt. Mix in the garlic, salt, pepper and mint. Chill the mixture for 1 to 2 hours.

TZAZIKI Sauce
Here's 2 recipes for you


Tzaziki I
1 1/2 cups yogurt cheese, with liquid reserved
1 tablespoon minced garlic
2 tablespoons lemon juice
3 tablespoons chopped dill
Salt and pepper to taste

In a bowl combine yogurt cheese, garlic, lemon juice and dill. Add salt and pepper to taste. Depending on desired consistency, add reserved yogurt liquid.



Tzaziki II (I like this one best)
2 cups plain full fat yogurt (high-quality, without gums and thickeners)
2 teaspoons pureed very fresh garlic
1 teaspoon sea salt
2 cucumbers, peeled, seeded and grated on large holes of grater
1/2 teaspoon freshly ground black pepper
2 teaspoons olive oil
Fresh mint leaves, for garnish

Drain yogurt for 1 hour in a cheesecloth-lined strainer to remove some of its water. In a bowl, combine the yogurt, garlic and 1/2 teaspoon salt. Sprinkle the remaining 1/2 teaspoon salt over the grated cucumber and drain, 10 to15 minutes, to extract excess water. Add drained cucumber to yogurt, along with pepper, and mix well. Cover and refrigerate until chilled, about 1 hour. Drizzle with olive oil and garnish with mint leaves. Serve with pita triangles or grilled fish.

TAHINI SAUCE

Ingredients:
2 garlic cloves
1/2 teaspoon fine sea salt, or to taste 1/2 cup well-stirred tahini (Middle Eastern sesame paste)
1/3 cup fresh lemon juice
1/4 cup water
1/4 cup olive oil
1 tablespoon finely chopped fresh cilantro
1 tablespoon finely chopped fresh flat-leaf parsley
1/4 teaspoon ground cumin


Mince garlic, then mash to a paste with sea salt. Whisk together garlic paste and remaining ingredients until combined well.


Makes about 1 1/4 cups.

Tazhiki sauce, basically its a cucumber sauce. I don't have a recipe now but I'm pretty sure you can find one online.
Also if you have a Costco near you they have awesome Tazhik sauce.

The sauce is a cucumber sauce and it is called tatziki sauce. Cool, and creamy made with cucumbers, dill, and yogurt.
