Famous Restaurant Queso Dip

INGREDIENTS
5 pounds American cheese, cut into pieces
3 1/4 cups water, divided
1 1/2 onions, minced
1 cup minced celery
1 cup minced green bell pepper
1/4 cup finely minced jalapeno pepper, seeds and veins removed
DIRECTIONS
Stir together cheese and 3 cups of water in a double boiler over gently simmering water; stir occasionally until the cheese has melted and the mixture is smooth.
Meanwhile, combine the 1/4 cup of water, onion, celery, green pepper, and jalapeno in a medium saucepan; bring to a simmer over medium heat. Whisk the vegetables into the cheese, then pour the mixture into a large pot; place over medium heat and simmer for 5 minutes.

In big a microwave safe bowl - Cut up a big hunk of Velveeta Cheese into 1" cubes. Pour in a little milk. Microwave until melty. Watch it so it doesn't boil over. Stir. Then stir in enough salsa (pace, taco bell, whatever) to make it the way you like it. Not too much.

My husband makes an excellent one.

1 can Rosarita refried beans with jalapeno
1/3 pound cubed Velveeta
1/4 cup Taco Bell hot sauce
A couple Tbsp milk maybe, just for thinning

Combine everything and nuke for a couple minutes, stir, nuke more if needed or until hot and combined.

It's amazing. I ate half the bowl that night he created it!

easy , velveeta and salsa, microwave it. the recipe is probably on the box of velveeta.

if you want to get more complicated, melt cheddar and combine it with some velveeta and some homemade salsa.
