Take LOTS of money with you. Grand Cayman is very expensive and Georgetown is not terribly close to the "must see" attractions. Georgetown is a nice shopping and dining/drinking neighborhood but it's also a tourist trap. Prices are very high and they deal in Great British Pounds--- the exchange rate is horrible right now if you're American. Figure twice what you're used to paying for everything!
If you will be on Grand Cayman long enough to make it worthwhile, rent a car. Taxis are sometimes hard to find, especially to get you back to Georgetown after you have been to the other side of the island. There are several car rental shops in Grand Cayman that will drop the car off to you, making it much more convenient. If you do get a car, go to the Turtle Farm and to 7-mile Beach. There is an outstanding restaurant right next to the Turtle Farm, very romantic and lovely. 7-Mile Beach is just stunning but be careful where you park--- many sections of beach are private property and your car will be towed so make sure you are at a public beach.
Also do a search on Stingray City and see if there are any tours that can get you there and back around your port call. Stingray City is a sandbar about a mile off of the island; you go there in a catamaran tour and can hop out of the boat and hand-feed the stingrays in shallow water. The stingrays here are very tame and used to people (don't assume all stingrays are like this in other places though!) and will not hurt you as long as you mind your step! This would be my one "must see" on the island but not sure if it fits into your schedule!

Spend the day on the Seven Mile Beach,,,,it is great,,,,,,,take a Taxi to The Royal Palms,,,,,,,have lunch and walk the beach and visit the Hotels as you walk for a nice Caribbean Drink.....shopping is expensive....Most of the shops are priced in U.S. Dollars,,,,the Restaurants are in Cayman Islands Dollars,,,That is what we use,,,,,A U.S. dollar is only worth 80 cents,,,,so you lose 20 cents on a dollar......in town gets crazy with all the Cruise ship passengers so try to get out of down quickly,,,,Seven Mile beach is not far at all...just a few dollars in a taxi,,,and enjoy the most beautiful beach in the world....

There is a town named HELL, you have to visit it. Rent a car and see all of Georgetown.
We had fun on the glass bottom boat.
Go visit the 7 mile beach.
Swim with the sting rays.
Have a great cruise. Enjoy it all

Walk on seven mile beach. Feed the stingrays. They are very gentle. The only thing you have to be careful of is don't step on them. You'll hurt them. Its one of my favorite days ever. Stingray City is the best! thats your must have. You take a boat out to a sandbar, get out and pet the stingrays. They are absolutely huge and very gentle. You don't have to worry about stepping on them b/c those are so large they float several feet off the ground. You feed them octopus and they kinda suck it out of your hand like a vacuum. It's the definite MUST DO.
