..you work around a lot of guys and none of them talk to you or pay any attention to you except one of them. like theres this one guy he will always smile and say hi and start conversation and make jokes and stare at me. but none of the other guys do this, just him. why is this?

Sounds to me like he likes you. Always smiling at you and staring, that is a big sign.

Maybe he is the only one interested. You shouldn't care if the ignore you. Go for the one that comes for you.
Or you could take initiative and talk to them.

Because you are probably really cute and they are afraid to talk to you.. Or, they may think you are not worth talking to because of past experiences.
