You can but you will lose taste and texture but if you have it tightly covered, it should be fine. It will thaw fairly quickly. Heat it back up slowly as to not dry out, if it is skinless-boneless I would cut it up and saute it up in a fry pan with a bit of olive oil. If you microwave it, go easy on the power.

You can freeze cooked chicken. Thaw it in the refrigerator and then heat in a microwave, oven, or skillet. Also, consider thawing and slicing for use in a salad; no reheating necessary.

From the USDA site:
Ready-Prepared Chicken: When purchasing fully cooked rotisserie or fast food chicken, be sure it is hot at time of purchase. Use it within two hours or cut it into several pieces and refrigerate in shallow, covered containers. Eat within 3 to 4 days, either cold or reheated to 165 °F (hot and steaming). It is safe to freeze ready-prepared chicken. For best quality, flavor and texture, use within 4 months.

I don't see why not... Now depends on how you would use it for fajitas or salads I would cut it up... To heat it up just put it in the microwave since you already grilled it and spiced it up...
