you could try a authentic greek spinach dish.. its called spanakopita It is spinach with feta cheese wrapped in a triangle form in phyllo dough

At my job, we used to make turkey meatloaf and add a layer of spinach in the middle of the loaf. This was very good. Another good idea for spinach is to saute fresh spinach in italian dressing. Add diced red pepper, portabella mushroom stems, salt and pepper. Use the portabella mushroom caps (scrape out the gills on mushrooms) and fill with spinach mixture. Sprinkle parmesan cheese over the top and put in 450 degree oven for 12 minutes.

You gotta have it the Indian way. Palak Paneer.. I dont know if you will be able to find Paneer..a very simple Indian Cheese. But the spinach can be prepared minus the cheese, or you can substitute the cheese for extra firm tofu that has been deep fried. Do this:
10 oz frozen spinach or equal amount of fresh, steamed and drained of water
1"piece ginger, grated
1 big onion
6 cloves garlic
1/4 tsp. turmeric
1tsp cumin powder
1tsp Garam Masala pwd.--(just a ground spice mix of cumin seeds, cinnamon, fennel, fenugreek)
1/2 c plain yogurt
Cut up onion, fry it with the ginger and garlic..when soft, add your spices and sautee them for about 30 seconds to a min.
dump this mixture into a food processor, or mixer with the yogurt. Blend until smooth..Return the mixture to the pan and add the spinach, and tofu or paneer and as much cayenne powder, salt and black pepper as you like. Simmer it about 10 mins.. eat it up with Rice. Basmati is the Best.. or Naan, pita bread..or chappati, tortilla if you have it!

Strawberry spinach salad with feta cheese & pine nuts.

Adding the spinach to a quiche dish.



Warm Spinach & Artichoke Hearts Salad
Serving Size : 4

1 TBS olive oil
10 oz of fresh baby spinach
1/4 red onion, diced
1/3 c. sundried tomatoes, chopped
1 (8 oz) jar of artichoke hearts with marinade
2 cloves minced garlic
1 tsp dried basil
1 TBS balsamic vinegar
1 c. crumbled feta cheese

Preheat the oven to 300°. Lightly oil a shallow baking dish. Fill the oiled baking dish with baby spinach. Top with red onion and sun dried tomatoes.

Slice the artichoke hearts into bite size pieces, reserving the marinade. Scatter the artichoke hearts over the spinach. Add the garlic, basil and vinegar to the marinade, blending well. Drizzle the marinade over the spinach.

Top with the crumbled feta. Bake the spinach until it is wilted but not browned, about 10 minutes.

Stuff peppers with it--mix feta or cream cheese with thawed from frozen leaf spinach (squeeze excess water out of the spinach first), add an egg, some bread crumb, a little salt, pepper, nutmeg. Take this mixture and put it in peppers cut in half, take the stuffed peppers, put them into a skillet with medium hot olive oil face down until the stuffing side of the pepper is lightly browned, then flip over and let cook gently until the pepper is softened.

You can eat the stuffed pepper hot or let it cool.

This is an italian recipe from my grandmother....the peppers are out of this world stuffed this way. The stuffing is very similar to what the greeks use in Spanokopita, that's filo dough filled with the spinach and cheese mixture and baked....

Creamed Spinach. It sounds gross, but tastes amazing.

Take a couple packages of frozen spinach and cook in the moicrowave, while tyhat is cooking put about a cup of Heavy cream in a pan with a few tablespoons butter. Get to small boil and stir in cooked spinach (drain spinach with a kitchen towel to get all the water out!) Put spinach in cream and stir in, I add a pinch or two of nutmeg, salt and pepper. Your Done!

Here's the Spinach Lasagna recipe that I use. It's fantastic.

1/2 lb lasagna noodles
1 lb ricotta
1 c Monterey Jack (i buy already shredded)
1/2 c grated Parmesan
1 lb bag of frozen spinach (thawed)
Pasta Sauce of your choice

cover bottom of pan w/ 1/3 of the sauce, arrange layer of uncooked noodles on bottom. cover with second 1/3 of sauce. combine ricotta, Parmesan and spinach and spoon 1/2 of the mixture over noodles. put a second layer of noodles over the cheese mixture, then the rest of the cheese mixture. cover with remaining sauce. top with Monterey Jack. (i like to sprinkle some Parmesan also) cover with foil, domed a little so that the cheese doesn't stick.

bake 45 minutes at 375 degrees

remove foil and bake 20 more minutes

allow to set for 1/2 hr before cutting to serve.

After cooking add a little garlic and olive oil, use this as a base for chicken or fish. I love spinach omelets with cheddar, spinach quiche, spanakopita, spinach dip, spinach salad w/mushrooms, mandarin oranges with hot bacon dressing,
creamed spinach with a big juicy steak,



Spanakopita
1/2 cup vegetable oil
2 large onions, chopped
2 (10 ounce) packages frozen chopped spinach - thawed, drained and squeezed dry
2 tablespoons chopped fresh dill
2 tablespoons all-purpose flour
2 (4 ounce) packages feta cheese, crumbled
4 eggs, lightly beaten
salt and pepper to taste
1 1/2 (16 ounce) packages phyllo dough
3/4 pound butter, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Heat vegetable oil in a large saucepan over medium heat. Slowly cook and stir onions until softened. Mix in spinach, dill and flour. Cook approximately 10 minutes, or until most of the moisture has been absorbed. Remove from heat. Mix in feta cheese, eggs, salt and pepper.
Lay phyllo dough flat and brush with butter. Place a small amount of spinach mixture onto each piece of dough. Fold phyllo into triangles around the mixture. Brush with butter.
Place filled phyllo dough triangles on a large baking sheet. Bake in the preheated oven 45 minutes to 1 hour, or until golden brown.



Spinach and mushroom frittata
1 (10 ounce) package frozen chopped spinach, thawed and squeezed thoroughly to remove liquid
4 eggs
1 cup part-skim ricotta cheese
3/4 cup freshly grated Parmesan cheese
3/4 cup chopped portobello mushrooms
1/2 cup finely chopped scallions with some green tops
1/4 teaspoon dried Italian seasonings
1 pinch Salt and pepper, to taste
DIRECTIONS
Preheat oven to 375 degrees.
In a large bowl, whisk together all ingredients until well mixed. Spray a 9-inch pie plate with cooking spray and fill with the spinach mixture.
Bake for 30 minutes, or until browned and set. Let cool for 20 minutes, cut in wedges and serve.

I sautee it. Chop up some garlic and put that in a pan with about 3T of olive oil. Wilt the spinich (turn it over frequently). This should take about 5-7 mins. Turn off the heat and add about a 1/4 - 2/3 of a cup of water, put a cover on immediatley and let sit for about 5 mins.
