I work at a Greek restaurant and the marinated calamari is very tender. I bought some white squid from a seafood market and no matter how long I cooked it for, it turned out a little chewy. My boss would only tell me that he uses purple squid. Any ideas out there?

You do not cook calamari for long. The longer you cook it the tougher it gets. It only needs a minute or two.

younger the calamari, the more tender. that's why most chefs & calamari lovers prefer baby calamari.

we greeks know how to cook calamari lol you should try soaking it in milk or in another seasoning
