Honestly, I love Chinese buffets. It's the kind of food where you want to have a little bit of everything, which is what buffets are good for. The other types you mention (Mexican, American, Mediterranean--I LOVE Mediterranean food) are the kinds of foods where I would like to order just one dish. It's not that Chinese food isn't as good, but that it invites variety.
