They are sour prunes:

A prune, made by drying a red plum, which has a sweet/sour tangy flavor. This type of prune is available in Indian and Middle Eastern markets.

Aloo Bhukhara Chutney

Ingredients:

1. Sour Plums: 2 Pounds
Cut in halves and remove pits, Chop
2. Raisins Chopped: ½ Cup
3. Onion finely chopped:1
4. Garlic Peeled and crushed: 2 cloves
5. Cardamom seeds crushed: 1 teaspoon
6. Cinnamon powder: ½ Tablespoon
7. Brown sugar: 1 Pound
8. Cayenne ground: ½ Tablespoon
9. Salt: 1 Tablespoon
10. Lime Juice: 2 Tablespoons

Method:

Put all the ingredients in a heavy bottom pan. Stir. Turn on heat. Bring it to a boil. Simmer about 25 minutes or till right consistency has been reached.

Aloo Bukhara Drink (Sherbat)

Ingredients:

Sour Plums 1\2 kg
Sugar 500 gms.
Water 300 ml.
Ginger Juice 20 gms.
Few leaves of mint (Pudina).

Method:

Method:

Boil plums in a pan for about 4 minutes.
Peel the skin off the plums
Extract pulp from plums.
Make syrup of sugar with water.
Mix pulp with syrup.
Add ginger juice and mint leaves( chrushed).
Serve chilled after adding soda water.

Aloo bikhara is a local variety of plum,when in season they are sold fresh,these are also called aloo bukhara,reddish pink to dark red ,almost black in colour as they ripen,sweet-sour in taste.Eaten fresh or used in cooking ,surplus fruit is dried for year round use,fresh fruit are highly perishable.

The scientific name for alu bukhara is Prunus domestica. It is a wild apricot belonging to prunes family.
