just try to find out what the shelf life of a sweet potato at room temp is

At room temp I would say a few hours, especially if theres any cream or dairy in it. Refrigerated I'd give it 3 days or so.

too much dairy to keep it room temperature. It's ok to leave it out during dinner, but after serving dessert, cover it and put it in the frig. It will last there about a week. There's a lot of dairy in a potato pie, so it really should stay refrigerated. It will get moldy after a day or two at room temp. (and that's just the mold that you can SEE. Who knows what bacteria has grown but isn't visible to the naked eye.) Trust me...I've lived through enough Thanksgiving leftovers to know.

However, it's so good when you warm it briefly and serve with a scoop of vanilla ice cream!!!!

it all depends on how much air you let get into it, if you dont seal it well in a airtight or semiairtight container it may only last 3 days to a week at max, if you seal it nicely, keep it away from the sun and too much moisture it can last a week and maybe even longer, you can also freeze it for up to 6 months, but that sort of takes out that homemade pie feeling.

Well if you freeze it it'll be good for a month or so,but at room temp I'd say less then a week since it aint refridgerated
