dahl and chapatis
200grms yellow or red split lentils rinsed and drained
3/4 fresh diced tomatoes
1 medium onion finely chopped
garlic i use 3-4 cloves
half a fresh chilli
dessert spoon of turmeric
1 litre water
salt & pepper to taste
to serve
fresh coriander to garnish
chapatis to dip
put all in a pan, give a little stir, put on high heat and bring to the boil, wen boiling give a stir, turn heat down and simmer for around 15 - 20 mins... you shold end up with a nicely textured, thick soupy mixture
at the end of cooking, to serve add some fresh coriander on the table with some warm chapatis and enjoy with a glass of chilled dry white wine
ps its tastes even better after being in the fridge and used as left overs with some prefluffed rice...

Scrambled Tofu
* 1 14-ounce package extra-firm tofu, drained
* 2 tablespoons vegetable oil
* ¼ teaspoon turmeric
* 1 tablespoon garlic powder
* 1 teaspoon onion powder
* ½ cup nutritional yeast
* salt and pepper, to taste
* 2 small tomatoes finely chopped
* 1 green onion, finely chopped (optional)
* 1 bell pepper/zucchini, finely chopped
* soya sauce to taste
Crumble the tofu (with your hands) into small pieces and then saute in oil in a frying pan. After a few minutes, add the remaining ingredients, turmeric through bell pepper, if used. Lightly toss and add soya sauce in the pan until well-cooked (about 10-15 minutes) . Serve warm.

my best friend is vegan and she makes this amazing chili using lentils and all sorts of fresh fruits and veggies. She makes her own sauce using diced tomatoes, and its sooooo good.
