I just dredge (run it through) it in flour that's been seasoned well (Try Old Bay or a Cajun seasoning blend), then through an egg that's been beaten with a little milk then through Panko breadcrumbs (they're a coarser bread crumb that you can usually find in the Asian section of the supermarket). Make really crispy and delicious fried fish, it's also good on chicken!

A great recipe, and so easy is to use pancake mix, and use beer for your liquid......wallah!
