other than the usual samosa's, pakora's and baji's what other easy to eat foods can we include within our menu?

MUBARAKHO!

It sounds like you want a more contemporary style and not the usual boring standard fare: I love it!

You can always take an old traditional fav and put a new twist on it. Chefs are always willing to experiement & love challenges. Best thing to do is make a potential list & discuss the ideas with your caterer (he or she may have some great suggestions as well). Once you decide, have him invite you back for a sample tasting (take some friends/family with you...more fun & more opinions). They can help you to finalize your menu.

Tandoori black pepper shrimp skewers or paneer tikka skewers (for veg eaters)

aloo tikkis (stuffed with goat cheese & Indian cilantro & cashew pesto or a mango chutney)

spicy cocktail meatballs (chhote kofte)

lucknowi chaat

gobi manchurian or chicken manchurian

spicy paneer and spinach pizza

samosas: filled with spicy ground chicken, spinach & almonds

goan style crab cakes

indianized mini spring rolls (filled with spices, coconut, chicken...) served with a spicy tomoto sauce or a seet/sour tamarind sauce

various bite size kababs (chicken, lamb, veg...)

There are lots of ideas depending on your style of food, theme, veg vs non veg, budget...

I hope this helps & CONGRATS!

Strange question. In India all food is traditionally eaten with the fingers.
