Almost any vegetable that you would use for dipping. Primarily you want it to be crunchy enough to be able to drag through the cheese.

Broccoli and cauliflower are good choices because they are sturdy plus they taste great with cheese on them! Roasted baby Yukon potatoes would be good too. Try some of the other varities of broccoli like broccolini for something different. Mushrooms would be good, and how about some roasted sweet onion? Think of vegetables that would taste great with melted cheese on them!

We did this at a celebration many years in the past...stumbled on it someplace on the internet, yet I only searched and may't discover it now. besides - that is what we did: purchase a cheap flower pot with the froth issue (for flower arranging) in it. purchase assorted lengths of bamboo skewers and placed all kinds of greens on the skewers (we used broccoli, cauliflower, cherry tomatoes, carrot sticks, asparagus). position the longest skewers contained in the middle and the shorter ones around the exterior edges. Then human beings can only elect a skewer and start up dipping. Sorry i could not discover the picture on the internet...
