You can make a simple cheese sauce:
melt some butter in a medium pot and add 2 tablespoons flour. Cook 3-5 mins. Add a splash of beer or white wine and dissolve. Add a few cups of milk and stir until bubbly and thickened. Add several handfuls of grated cheese. Stir until melted and pour over veggies. Sooo good!

Or simply toss veggies with salt, pepper, olive oil, and herbs, and maybe a splash of basalmic vinegar. Good hot or chilled.

Most veggies are also quite good with a little butter on them and a dash of dill, basil, or rosemary. Maybe a splash of lemon juice.

Also good and more unique is a marinara sauce. You can go with simple canned, or just add sauteed onions and garlic to canned tomato sauce and add basil and oregano. Top with paremsan cheese.

If you take some fresh chopped garlic and whole black peppercornsput them in a sautee pan. Then add 1/4 cup of extra virgin olive oil, slowly heat until the garlic sizzles for about 1 min then drain and pour the oil over your veggies with a bit of kosher salt. Simple,flavorful and very light!!!!What a delight

Basic White Sauce:
Melt a little butter and saute sliced onions in it
Add a bit of flour in it
Thin the paste with milk and add salt as desired

You can have variations of this by adding cheese, chopped tomatoes... let your imagination soar!

ONE is cheese sauce and that's made with a white sauce and melted cheese. -------- HEREs another one i use often.CHICKEN stock+ chicken bullion and i add later after cooking a table spoon of cornstarch to make the juice thick.--------SWEET and sour sauce--------pineapple juice 1 cup 1 tablespoon of catchup and half of a chopped onion. GREAT 4 Chinese veggies or stir fry.

A nice spicey tomato sauce! Yum Yum!!

For all veggies I would recomend the "Cranks Cook Book" it has changed our meals!!!!!

always steam the veggie,best sauce is olive oil salt pepper and balsamic vinegar.(if you dont like vinegar go with lemon)

...First... Dont Boil Veggies !!! you're kill'n them... steam the little critters... take a pot and put about 1 in of water in it... find a base or insert with holes or a basket to put your veggies in... dont let them in the water... bring the water to a rolling boil, making lots of steam... steam them till done...
drain and serve... melted butter and garlic... that's it !
