Trying to avoid the usual salad/plain new potatoes route. Any suggestions appreciated. Also, if anyone has any good ideas for vegetarian starters and easy chocolatey desserts, that'd be great too.

Hee hee! To the gal who suggested sex for a dessert, I think my two gay neighbours, who are coming for dinner with my boyf and I, may be a bit disturbed if I suggest a foursome!

i love roasting spears of asparagus with olive oil, salt and pepper untiluntil the ends are a little crispy. then squeeze fresh lemon over top and sprinkle with parm cheese.

or roast beets (whole, wrapped individually in tin foil) and marinate them with orange juice, honey, fresh herbs. serve at room temp.

or sautee baby carrots with fresh herbs, butter and honey.

my favorite veg started is artichoke dip. 1 can artichoke hearts, 3/4 c. mayo, 1 c. parm cheese, salt and pepper. blend until creamy. bake in shallow dish for 3o min until lightly browned and bubbling. serve with crispy pita chips or steamed artichoke leaves. I sometimes also make baby bread cups (see mathastewart,com) they're super easy if you have a mini muffin tin and serve it in those.

super chocolately brownies with a dollop of ice cream. nothing is easier than brownies. stir and bake. underbake them slightly and serve warm and gooey with mini choc chips sprinkled on top.

This probably looks harder than it is. Once it's in the oven, your done until it is ready. If you use a nice looking roaster or large casserole you can serve it in the same dish you roast it in. Add the cut up sweet potatoes and you have a complete meal. Ask your Mom to help you with cutting up the vegetable if your not used to doing it. Roasted Chicken with Apples, Onions and Fennel Serves 4-6 Preheat over to 400 degrees F 1 whole chicken (about 3 lbs) cut in 1/8s, or 2 whole chicken breasts cut in ½, or 8 small chick thighs and/or drum sticks (about 2 ½ lbs) 4 small crisp apples (gala or fuji) quartered, if large use 3 to 4 apples and cut in sixths 2 medium or 1 lg. sweet onion, sliced thick 2 small fennel bulbs, quartered 8-10 pealed garlic cloves 6 small sprigs rosemary 4 tbs. olive oil Kosher salt and pepper to taste (Peeled cubed butternut squash, sweet or white potatoes would be good too. If you don’t like fennel or can’t get it, leave it out. It is the apples and onions that are the main flavor ingredients) Season Chicken and Vegetables with Garlic Powder, Salt & Pepper or your choice of seasonings. Toss all ingredients in a lg. roasting pan Turn chicken skin side up on top of other vegetables Roast until chicken is cooked through and vegetables are tender, about 45-60 minutes.

A few side dish ideas:
-Cauliflower and Brocolli with Roasted Garlic (Williams Sonoma does this)
-Sauteed spinach, mushrooms, and pancetta

-Brussel Sprouts with Pecans and Sweet Potatoes: here:
1 1/2 cups sweet potatoes, peeled, cut in 1 inch cubes
3/4 lb Brussels sprouts, cut in half
1 tablespoon butter
1/2 medium onion, chopped
1-2 garlic clove, minced
1/4 cup chicken stock
4 teaspoons brown sugar or honey
1/4 teaspoon cinnamon
2 tablespoons pecan pieces, toasted
Place the potatoes in a medium size saucepan, add enough water to cover, cover and bring to a boil; cook until potatoes pierce easily when pierced with a fork drain and reserve.
Rinse the sprouts under running water, removing any yellowed or wilted outside leaves, cut in half and place in a microwave safe dish; microwave for 5 to 6 minutes stirring 2 to 3 times, drain and set aside.
In nonstick skillet, melt the butter, saute onion and garlic just until tender.
Add sweet potatoes,brussels sprouts, stock, sugar, cinnamon and pecans;cook for 3 minutes or until vegetables are lightly glazed.

Chocolate dessert-
Brownies from a box, or bought- warmed in the oven at 200 just before serving. Add a scoop of vanilla ice cream and hershey's syrup. Keep it simple, everyone loves this.

Veggie appetizers-
Baba Ghanoush, Olive tapenade, Mango Peach Salsa, Vegan Chili Cheese Dip, or Artichoke cheese dip.

why don't you try this?? jacket spuds with grated cheese and spring onion's it is so easy. just cook your spuds as normal then cut the spuds in half and scoop out the potato but try and not rip the skin so do it with a teaspoon, then mash the cheese,spring onion with butter together then put the mash back in2 the skins and if you want put some grated cheese on top then pop back in the oven on a low setting 4 about 5-10 mins or if you like it crispy 15mins! try it is lovely.

I have a simple Dessert solution ... chocolate fondue!
All you need to have is:
Fondue pot (if you have more than 1 pot, you can do white and milk chocolate)
Milk chocolate (tollhouse chips work well)
bamboo skewers
assorted fresh fruit; strawberries, banana slices, etc.
Pound cake any flavor cut into 1 inch cubes.

Just skewer and dip ... YUM!

Veggie-wise, try a super simple sauté of either fresh spinach or broccoli florets in olive oil with chopped garlic and a squeeze of lemon juice and salt to taste.

Bearnaise sauce

steam the asparagus(never boil them) when still crunchy remove, cold bath for 1 minutes, then roll at least 5 asparagus in a slice of bacon, salt pepper to taste and in the oven at 350 for 12 minutes. Remove plates and drizzle some Bearnaise sauce on top.
