They say vegetables loose their vitamins when you cook them, so I didn’t think it would be too ridiculous to think bread might have some nutritional difference when toasted. I bet you guys are just guessing.

How could there be any significant difference if you compare two pieces of bread of the same size from the same loaf and toast one and not the other? The only possible difference in unburnt toast and the bread is that the toast will have slightly less water content from evaporation by heat.

Toast is warm bread which is crispy. Sometimes when you keep the bread in the toaster too long, little bits of crispy goodness flake off. That said, I would have to say that toast has about 30 less calories than bread because of the missing flakes.

Bread is already cooked (baked) - toasting it just cooks it a bit more.
