Beverages are a wonderful part of the Indian cuisine. Here are is a mango Lassi recipe and links to other recipes which refresh, whet one's appetite or make a perfect finish to the perfect meal. This drink is very nice as an appetizer. The tang of the yoghurt offsets the sweetness of the mango beautifully.

Ingredients:
1 cup plain yoghurt
1/2 of a medium ripe mango, diced
2 Tablespoons sugar
8 ice cubes

Combine all the ingredients in a blender until smooth. To take out any lumps, put through a strainer, pushing out the liquid as you can.

Note:
Mangoes: Select a ripe mango for this mango lassi recipe. I have found it best to slice down one side of the mango, just next the large seed. Cut a crosshatch pattern on the slice and slice off the pieces from the skin. Also, you can use mango puree instead of fresh.
