How spicy would a person from India have their food (korma, curry, etc). I love indian food, and usually get it mild, but is that "traditional"? or would a "real" person from India have it much hotter?

It really depends on the dish but usually Indians enjoy eating it spicier and the waiters in restaurants know that and we get spicier versions of the same dish. Indian food just doesnt taste like Indian food if it doesnt have that kick! Even if the dish is not spicy enough -- we can always add Indian pickles on the side. If the food is too spicy (for kids), then we "tame" it with yogurt.

It also depends on the region of India you are from, Gujaratis (Northwest India), prefer their food mild & slightly on the sweeter side. On the other hand, people from Andhra (south) eat extremely hot food, it's too hot for even other Indians! It is really "blow your head off" crazy spicy!

Ultimately, it's personal & regional preferences.

Indian food uses a lot of spices, hence the name "spicy" (not trying to be smart, here). I prefer the term "hot" - yes, a lot of it is hot, but I know a lot of Spanish and Middle Eastern folks that like their food full-flavored and full of spice, but not heat! If I'm going to use a hot spice, I put a yogurt and cucumber salad together, with a little mint and ground cumin - on the side to offset the heat. Also, the paratha or naan or whatever flatbread you have on the side will help.

'Spicy", 'Hot ' & 'Pungent' are all used when decsribing Indian food, so that leaves no doubt at all about how we in India like it,at the same time spices can easily be adjusted according to taste ,personal & regional preferences,Like chinese food ,Indian food is adapted to the taste of a foreign country.At home we would vary the spice accoding to our family tastes,in a resturant even in India we usually specify how hot we would like it,which means it is all very variable yet great tasting.

make there food much hotter, than you or I would, being that
we are from the States.

Not only Indians have HOT food, they also eat a green chili with it.

My brother in law is indian. He loves his food as hot as you can get it.

Just imagine a combination of 5 different chilis would taste like plus loads of garlic and onion.It wont hurt you.Try it!
